Cheese Stuffed Tomatoes



These stuffed tomatoes are sure to be a hit!  Stuffed with wholesome brown rice, homemade cheese (see previous recipe) and fresh herbs, they make an excellent appetizer or snack. They impress even more when the tomatoes are homegrown!

Please note the measurements below are approximate.  They can be adjusted for personal preference or based on the number of tomatoes being prepared:

4 or 5 medium to large sized tomatoes (I used 5 medium tomatoes because that's how they came packaged when purchased on the vine)
3/4 cup hot cooked brown rice
2/3 cup homemade cheese
1-2 cloves minced garlic
About 2 Tbsp fresh chopped parsley
Grated parmesan

Hollow out the tomatoes, leaving enough pulp to keep them strong enough to hold their shape
Mix the rice, cheese, garlic, and parsley
Stuff the tomatoes with the cheese mixture
Sprinkle the tops of the tomatoes with parmesan
Bake tomatoes in a baking dish at 375 for 20-25 minutes
Serve immediately
